“Let’s put the fun back in cocktails,” says the highly coiffed and super-dapper Dan Knight, as he places a paper cup with a cocktail umbrella in it on the counter. This is the Hinky Fizz – a strawberry and prosecco sorbet floating like a shocking-pink island in a sea of gin, elderflower liqueur, peach bitters and grapefruit soda.
